Jaipur has its specialty. A Rajasthani delicacy, linked with the monsoon festival of Teej, is called Ghevar consisting of round cakes of white flour over which sweetened syrup is poured and many more.... sweets.

Jaipur may be known the world over for its impressive Hawa Mahal and the fortified old city of Amber, but connoisseurs recognized it for another specialty - Daal Bati Choorma. This cuisine owes its origin to the Jaipuri penchant for picnicking in the rainy season.

We have other specialities in the veg. category available at all small restaurants everywhere like the Puttu and Kadala, Appam and stew, Idiappam all of which have rice, coconut milk and flour as dominant ingredients. Kadala corresponds to Channa a north Indian dish. Idiappam, a small variant of noodles is a delicious cuisine consumed by malayalis. Rice with pairppu curry (dhal), with sambhar, avial, ollan, kalan, kootu, pappadam, rasam, thairu (curd) and the delicious interlude during intake of meals called 'Payasam'. The latter is prepared with rice, milk, sugar, and garnished with cardamom, nutmeg and other flavors. This is also the traditional offering in most temples.

We have to our knowledge a private residence at Nedumudi, close to Alleppey and on the banks of the back waters, where we provide ethnic lunch to our guests doing their boat cruise. This is an old traditional house with antiques and a very cute cowshed built during the British days. The householders are Syrian Christians (ancient) who have specialised in giving Kerala's traditional best in food.
